A good roast is one of the most versatile things in your freezer. Low and slow, it breaks down into beef you can pull apart with a fork — and from there you can go a dozen directions. Slice it thin for sandwiches. Pull it apart for street tacos. Smoke it and reverse sear it for something that'll turn heads. Or throw it in the crock pot with carrots and potatoes and let it run all day like your grandma did.
However you cook it, the key is low heat and patience. Use a meat thermometer and don't rush it.
