The sirloin doesn't get the same attention as a ribeye but it probably should. Lean, flavorful, and more versatile than any other steak on the animal.
Throw it on the grill whole and slice it against the grain for a table full of people. Marinate it and slice it thin for fajitas. Cut it into strips for a stir fry. It takes to seasoning well and holds up to high heat without falling apart.
Grill or cast iron over high heat, 3-4 minutes a side for medium rare. However you're using it, slice against the grain — it makes a real difference on a leaner steak.
